Our blue crab is processed at plants around Lake Maracaibo, Venezuela. Our main products come from the Caribbean Sea and the Gulf of Venezuela.
We use authentic blue crab of the species Callinectes sapidus, the same species known as the Atlantic blue crab.
We process wild-caught, fresh, live crabs. They are steam-cooked and the meat is handpicked to our quality specifications. The meat is flown daily to Miami, Florida, where it receives high-pressure processing (HPP) before distribution.
HPP is a non-thermal food safety process that applies very high water pressure to packaged food. It helps extend shelf life while preserving the texture and flavor of the crab meat, which is why it is applied in Miami before distribution.
We offer six grades: Jumbo Lump, Super Lump, Lump, Super Claw, Cocktail Claw and Claw. Lump grades are white body meat; claw grades are darker meat with a stronger flavor.
Jumbo Lump is made of the largest whole pieces from the muscles of the swimming legs and is used where presentation matters. Lump is made of smaller pieces of white body meat and is used in crab cakes, dips and soups.
